The engine can run away if you turn the main fuel screw on the pump in too far, which is why you do it with the intake open so you can snuff the engine out in case it starts to rev up. If you turn it in by small incriments, it will start to "hang" a bit when you rev it so you know its getting close, and back the fuel screw out a little bit. Then the pump is turned up as far as it can go. Read up on the procedure in the performance section if you haven't. Its well worth it!

Get a cheapo boost controller of Ebay so you can turn up the boost as well... The extra fuel wont do all that much if theres no extra air to burn it. Install a boost guage first, then turn the boost up. You'll have to plug off the dump valve at the front of the manifold, back when I had the stocker on there I used a plumbing cap from home depot. The reason I say install the gauge first, is I did the cap first and beat up on the car for a week or so (at what I thought was stock boost) only to find out when I hooked it up that it would peg my 30lb gauge! The waste gate was bad...

Your cold startup video sounds like your timing might not be right on... should be a little smoother starting up than that.

You might want to just make sure all your baseline timing stuff is right before turning up the fuel and boost! Get the cam and pump timed spot on, make sure you cold start device is either working and set properly or disabled and disconnected, and then you are good to crank her up. :-)
